 An easy homemade version of the store packages of  'add eggs' frozen breakfast skillet mixes. Tasty, with your personal preferences included, and portion controlled. Make as much or as little as needed to serve everyone. Children's portions, depending on age, are 1/2 to one adult portion.

Quick and easy with a minimum of ingredients. Kids love these, and they are great at any meal. This was my mom's recipe to use up leftover mashed poatoes. If you use the yukon red potatoes to mash, leave the skins on for a great color.
