Description
This simple variation on the classic red, white and green Pizza Margherita is perfect for tailgate entertaining or fall or winter grilling. The pizza crust is easy – just use any of the ready-to-bake pizza base suggestions in the recipe. Or you can buy pizza dough from your local pizzeria. You can easily multiply the recipe to serve more.
Ingredients
- 1 package (18 ounces) frozen pizza dough, thawed OR 1 tube (13.8 ounces) refrigerated pizza dough OR 2 Greek-style pita bread rounds OR 1 (12-inch) prepared pizza crust.
- ½ cup prepared pesto
- 2 small tomatoes, sliced
- 1 Hass Avocado from Chile
- ½ cup shredded Mozzarella cheese
Directions
Preheat outdoor grill or light charcoal in grill with cover. If using thawed frozen pizza dough, cut in half and roll or pull into 2 rounds. Place on grill. (If using refrigerated pizza dough, open container and spread dough on a baking sheet lightly dusted with cornmeal, as label directs, the slide onto grill.) Cover and cook until well browned on bottom, about 2 to 3 minutes. Turn and spread browned side with pesto and top with tomato slices. Rinse avocados, cut in half and remove seed and peel. Cut avocado into 8 slices. Arrange slices on the pesto. Sprinkle with Mozzarella cheese. Return to grill, cover and cook until bottoms are browned and cheese is melted, about 2 to 3 minutes.
